Heat oven to 400 degrees F.
MAKE THE SAUCE
In a skillet set over medium-high heat add olive oil. Once the oil is hot add the onion and cook until soft. Add the garlic, grated ginger, lemongrass paste, chili paste and saute for another minute just until fragrant.
Add the wild blueberries, honey, and balsamic vinegar. Cook just until the berries start to soften.
Add the ingredients from the skillet to your blender and carefully puree until smooth.
Add the pureed mixture back to your skillet and cook over medium heat until thick and reaches your desired texture. Taste and season with kosher salt and pepper, to taste.
MIX THOSE WINGS
In a larger bowl combine the wings and the blueberry sauce. Make sure to coat each wing evenly with the sauce. Place each wing on a baking tray covered in tin foil and place in the oven for baking.
BAKE THOSE WINGS
Cook your blueberry wings for about 45-50 minutes turning them every 10 minutes for extra crispiness! Enjoy!
